Even though I’m not officially on Weight Watchers, I have been on it before and there’s no way to really go off Weight Watchers once you’ve been on it.  It’s a lot like the mafia but without witness protection.  So, every once in a while, I find myself getting really excited about some new WW trick that I’ve learned about over the internet or via someone who’s more hardcore on the diet.  And that once in a while came yesterday when I found out about Black Bean Brownies.  I made a batch and they’re pretty darn delicious.  And yes, to the friends who I e-mailed about my self-created hummus/non-fat cottage cheese concoction, even better than that…but you should still try that if you’re looking to stretch your hummus calories, up your calcium…and have a resilient gag reflex.  (Nice sell there, huh?  Can you believe I used to work in marketing?)
For two points of desserty deliciousness, I submit to you the Black Bean Brownie recipe.  (I skipped the nuts and went with mini-chocolate chips instead.)
Ingredients

Nonstick cooking spray
1- 15oz. can black beans, rinsed and drained
6 egg whites or 1/2 cup fat-free egg substitute
4 oz. unsweetened chocolate
1 Tbs. light butter
2 cups granulated sugar
2 Tbs. instant coffee powder (regular or espresso)
3 Tbs. all-purpose flour
1/2 cup chopped walnuts (optional)
Instructions
Preheat oven to 350 degrees F
Coat a 9 x 13-inch pan with nonstick spray
Blend drained beans and 2 egg whites (or 1/3 of 1/2 cup egg substitute) in food processor or blender until smooth
Set aside
Place chocolate and light butter in small microwave safe bowl
Microwave for 60-90 seconds. Stir every 30 seconds until smooth. Set aside.
Combine bean puree, sugar, flour, coffee powder and remaining egg whites or egg substitute in a mixing bowl. Beat until well combined.
Blend in melted chocolate, pour mix into pan, sprinkle with walnuts
Bake 30-35 minutes
Stand in front of mirror pointing at reflection saying things like, “Hey skinny!” “Wow, skinnypants, you look great!” and “You look so skinny, I’d be jealous if I weren’t you!” 
Yield: Yields 30 brownies
